Started in the summer of 2023 after 5 years of planning, Neko Taiyaki is our love letter to Japan. The owner, Sam, spent a year living in Japan teaching English, and fell in love with Japanese food. But when he got back to Michigan, he found there to be a lack of options beyond sushi or ramen.
Taiyaki is a fish-shaped stuffed waffle that are filled with different sweet and savory fillings. They are the perfect example of street food that West Michigan can’t seem to get enough of. We’ve grown quite a bit, and now it’s time for us to go fully mobile.
